Description

Take your Taco Tuesday to the next level! The salty crunch of the taco shell meets the savoury umami of our seasoned Vegetarian Pulled Pork in this quick and easy recipe.

Method

  1. Coat the pulled pork with half of the taco seasoning and place them in a deep skillet with a lid - pour in vegetable stock and add in the onion. Cover and bring the liquid to a low simmer. Allow the pulled pork to cook for 15 minutes, or until cooked through.
  2. Add in the remaining taco seasoning and tomato paste. Allow it to simmer for 5-10 minutes – adding more stock if it seems to be drying out at all.
  3. Assemble the tacos by adding some lettuce and then pulled pork.
  4. Top with whatever toppings you like!

Ingredients

300g Linda McCartney Vegetarian Pulled Pork
1 pack Taco seasoning
1 stock cube
1 tbsp Tomato paste
4 Taco shells
200g Lettuce
5 Radishes
1 tbsp Jalapenos
1 Lime
