Description

What better time to whip up some delicious winter warmers? Spice up your next midweek meal. Because a warm, comforting dish is a MUST this January!

Method

  • Bring a large saucepan of salted water to a boil (leave out the salt if using gluten-free pasta).

 

Bolognese sauce: 

  • Heat the oil in a large saucepan.
  • Add celery, spring onions, carrots, and bay leaves, stir together and cook for 2 minutes.
  • Stir in garlic, plant-based mince, nutmeg and red wine, and bring to a vigorous simmer.
  • Add in the chopped tomatoes and vegetable stock.
  • Bring to a bubbling simmer for 15 minutes, stirring often.
  • Season with salt and pepper.
  • While the sauce is simmering, put the pasta in the large pan of boiling water to cook according to packet instructions.
  • Drain the pasta and return to the same saucepan.
  • Stir 3/4 of the bolognese sauce into the pasta pan and toss well to combine, holding back a little sauce to spoon top of each serving.

 

To serve:

  • Divide the pasta into bowls, top with a spoonful of the saved sauce, and garnish with basil leaves.
  • Finish with some finely grated parmesan, if using.

Ingredients

Bolognese Sauce

2 tablespoons olive oil
1 medium stick celery, finely chopped
6 spring onions (scallions), green and white parts chopped
1 medium carrot, finely chopped
2 bay leaves
2 garlic cloves, crushed
250g (9oz) Linda McCartney Vegemnince
1 teaspoon ground nutmeg
240ml (1 cup) red wine (I use Pinot Noir or something you like to drink at home)
1 x 400g (14oz) can of chopped tomatoes
120ml (½ cup) vegetable stock
Sea salt and freshly ground black pepper, to taste

400g (14oz) tagliatelle (or other pasta of your choice; you can use gluten-free)
Sea salt (leave out if using gluten-free pasta)

To serve

Handful of basil leaves, torn
Plant-based parmesan (optional)
