This is another all-time favourite. Serve it with a good, tasty spaghetti (try experimenting with whole wheat varieties), or use another type of pasta, such as macaroni, tagliatelle or fettuccine. Cooking the spaghetti is very easy, just follow the simple instructions on the packet, and remember when it's cooked to rinse immediately in cold water in a colander. This halts the cooking and washes the starch away. Spaghetti should always be served 'al dente', in other words, not mushy.

1 cup mushrooms, sliced

4-5 tbsp tomato paste
Fresh basil to taste
1 cup water or vegetable stock
