A mouthwatering mixture of fresh herbs and crisp salad leaves.
- Cos lettuce
- 1-2 tbsp. chopped fresh herbs
- 1 tbsp each of cider vinegar
- white wine
- 1⁄2 clove finely chopped fresh garlic
- 3 tbsp. olive oil
- 100g butter
- 2 tbsp. chopped fresh herbs
- Favourite rolls
Cook the lasagne according to instructions, meanwhile make the salad, using Cos lettuce, watercress, spinach, rocket and chicory. Add 1-2 tbsp. chopped fresh herbs.
Make the dressing using 1⁄2 clove finely chopped fresh garlic, 1 tbsp each of cider vinegar and white wine, 3 tbsp. olive oil, 1 tsp chopped fresh herbs (e.g. chervil, tarragon and basil). Dress the salad just before serving.
Take your favourite rolls, make three deep cuts in the top and spread the insides generously with herby butter (100g butter and 2 tbsp. chopped fresh herbs pounded together). Wrap the rolls in foil and pop in the oven with the lasagne for the last 15 mins.
(Open foil for the last 5 mins. to crisp the rolls) Scrumptious!
