Fish Free King Prawn Cocktail with Beetroot

Overview
This classic retro dish made with crisp lettuce, Marie Rose Sauce and Linda McCartney’s innovative juicy Fish Free King Prawns is the perfect way to start a summer’s lunch – or a thoroughly delicious little salad all on its own.
Method
Fish Free King Prawns:
Heat the oil in a pan and add the Fish Free King Prawns & garlic, cook for 5 minutes then add the parsley, remove form the heat and cool.
Marie Rose Sauce:
Add all these ingredients to a bowl, mix well. Add the cooled prawns & shredded lettuce, mix well and set aside.
Mix the olive oil, salt & pepper and pour over the rocket leaves. Using a mould ring or glass begin with a layer of the dressed rocket, then the diced beetroot, then a large dollop of the lettuce & prawn mixture, repeat the layers 2 or 3 times.
Ingredients
250g Fish Free King Prawns
1 Teaspoon garlic
2 Tablespoons olive oil
1 Teaspoon chopped parsley
3 Medium cooked beetroot, cut to 0.5cm dice
0.5 Iceburg lettuce finely shredded
75g Rocket
1 Teaspoon olive oil
Salt & pepper to taste
Marie Rose Sauce:
2 Tablespoons mayonnaise
1 Tablespoon ketchup
Pinch of cayenne pepper
1 Lemon’s juice
Salt & pepper to taste
Tip
Instead of making your own, use a good shop bought Marie Rose Sauce to save time.
